400g Whipping cream
5g Rosemary
2g Salt
0.5g Black pepper
1g Truffle brunoise
5g Gruyere cheese, grated

3 Cannelloni, stuffed
1L Water
15g Salt

Truffle Cream for Pasta recipe method

  • Bring cream with rosemary up to the boil, take off heat and infuse for 20 mins
  • Pass and season
  • Cook cannelloni to order for up to 2 min in salted water
  • Bring cream to the boil add cheese and blitz
  • Add truffle and drained cannelloni
  • Check seasoning
  • Served at once
