400g Whipping cream
5g Rosemary
2g Salt
0.5g Black pepper
1g Truffle brunoise
5g Gruyere cheese, grated
3 Cannelloni, stuffed
1L Water
15g Salt
Truffle Cream for Pasta recipe method
- Bring cream with rosemary up to the boil, take off heat and infuse for 20 mins
- Pass and season
- Cook cannelloni to order for up to 2 min in salted water
- Bring cream to the boil add cheese and blitz
- Add truffle and drained cannelloni
- Check seasoning
- Served at once
