Elderflower Mousse

Ingredients for Elderflower Mousse recipe
500ml Fresh Apple juice, strained
20ml Manzanilla Sherry
2 Leaf of Gelatine
8g Fresh Elderflowers, chopped
20g Caster Sugar
1g Malic Acid

Elderflower Mousse recipe method

  • Dissolve the sugar, malic acid, Elderflower, sherry & apple juice.
  • Leave to infuse for 10 mins, then pass.
  • Warm the mix and add the softened gelatine, stir to dissolve.
  • Place in a 1L cream whipper, charge & place in the fridge.
